Buffalo Tuna Salad in a Collard Green Wrap

Sometimes you need a quick meal. And I mean Q-U-I-C-K like under 5 minutes. This is that meal. The best part? It doesn’t sacrifice on health. Find a buffalo sauce without added sugar like this one and you’re golden.

Buffalo tuna salad on a steamed collard green

Ingredients

  • 1 5oz can tuna (or salmon), undrained. I recommend Wild Planet.
  • 5 saltine crackers, crushed
  • 1/2 celery stalk, diced
  • 2 tbsp plain yogurt
  • 2 tbsp buffalo sauce
  • 1/4 tsp garlic powder
  • 1/4 tsp black pepper
  • 1/4 tsp salt

Directions

  • Combine all ingredients in a bowl and mix with a fork.
  • Serve on crackers or wrapped in a steamed collard green (makes 2 wraps).
