When I was younger, my family and I would go to Florida almost every summer. My dad was sent there for work, and my mom, sister, and I tagged along and spent our days by the pool, at the beach, or going on walks. If you’ve ever been to Florida in the summer, you know how hot and humid it can be. I wasn’t and am still not great with super hot weather. I overhead quickly, so I always try to be prepared with ways to cool myself off.
As a kid, that preparation manifested itself in the form of Otterpops. The three of us would walk to the library or to our favorite suf shop in the afternoon, and my mom would bring along an Otterpop or two to keep my cool (and happy) during the trip. Sometimes I still by Otterpops because they remind me of those trips to Florida and because who doesn’t want a cool treat on a hot day?
That’s where these popsicles come in. I wanted to make something delicious and refreshing, without any added sugar. With just four simple ingredients, these are a healthy treat to cool you off on a summer day!
Makes 9 popsicles
- 5 cups chopped watermelon
- 10 strawberries, stem removed
- Juice of 1 lemon
- Handful of mint leaves
- Place ingredients in a blender or food processor and blend until everything is liquid.
- Strain the mixture through a mesh strainer to remove extra pulp.
- Pour liquid into popsicle molds and freeze!
